Prepare the Shrimp

In a bowl, combine the flour, cornmeal, cayenne pepper, salt, and black pepper. In another bowl, whisk together the egg and milk. Dip the shrimp first in the egg mixture, then coat with the flour mixture.

Fry the Shrimp

In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated shrimp and fry until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Po-Boys

Slice the French bread loaves lengthwise. Spread a generous amount of remoulade sauce on the inside of each loaf. Layer in the fried shrimp, followed by shredded lettuce, tomato slices, and pickles.

Serve

Cut the assembled Po-Boys into manageable portions and serve immediately.
