Prepare the Vegetables
Peel the onions and slice them into thin rings. Remove the stems and seeds from the jalapeños, then slice them into thin rings as well.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in the cold water until the batter is smooth and has a thick consistency.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully drop the battered onion strings and jalapeños into the hot oil in batches. Fry until they are golden brown and crispy, about 3-4 minutes.
