    Prepare the Bourbon Reduction

    In a saucepan over medium heat, combine the applejack brandy and brown sugar. Bring to a simmer and reduce by half, stirring occasionally. Set aside to cool slightly.

    Cook the Wild Rice Risotto

    In a large pot, bring the chicken broth to a boil. Add the wild rice, reduce heat, and simmer for about 45 minutes or until tender. Drain any excess liquid and set aside.

    Prepare the Apples and Cherries

    Core and dice the Granny Smith apples. In a skillet over medium heat, melt 1 tablespoon of butter, add the apples and sun-dried cherries, and cook until the apples are tender, about 5 minutes.

    Cook the Sea Bass

    Season the sea bass fillets with salt and black pepper. In another skillet, heat olive oil over medium-high heat. Cook the fillets for about 4-5 minutes on each side until golden brown and cooked through.

    Combine and Serve

    Stir the cooked wild rice into the skillet with apples and cherries. Plate the wild rice risotto, top with the sea bass, and drizzle with the bourbon reduction. Serve immediately.
