Heat the Dairy
In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling.

Whisk the Egg Yolks
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Cool the Base
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate until chilled, at least 2 hours.

Once the base is chilled, you can divide it into portions to create different flavors. Stir in cocoa powder for chocolate gelato, fruit puree for fruit flavors, or nut extracts for nutty variations.

Churn the Gelato
Pour the flavored mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up before serving.
