Method
Preparation of Base
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.
Combine Mixtures
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.
Preparation of Filling
Sauté Vegetables
In a large skillet over medium heat, add a splash of oil and sauté the diced onion and red bell pepper until soft, about 5-7 minutes.
Add Chicken and Beans
Stir in the shredded chicken, black beans, corn, cumin, and chili powder. Cook for another 3-4 minutes until everything is heated through.
Add Cheese and Cilantro
Remove from heat and mix in the cheddar cheese and chopped cilantro until the cheese is melted and everything is well combined.
Cooking La Loma
Preheat Oven
Preheat the oven to 350°F (175°C).
Layer Base and Filling
In a greased baking dish, pour half of the batter to create a base layer. Spread the filling evenly over this layer and then pour the remaining batter on top.
Bake
Bake in the preheated oven for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
Serving
Add Toppings
Once baked, allow to cool slightly before slicing. Serve topped with sour cream, avocado slices, and a squeeze of lime juice.
Enjoy
Serve warm and enjoy your delicious La Loma dish!
