Method

Preparing the Calamari

    Soak the Calamari

    In a bowl, combine the buttermilk and calamari rings. Allow them to soak for at least 30 minutes to tenderize the squid.

    Mix the Dry Ingredients

    In a separate bowl, mix together the flour, cornstarch, salt, black pepper, and paprika.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Remove the calamari from the buttermilk and let the excess liquid drip off. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, frying for about 2-3 minutes or until they are golden brown. Use a slotted spoon to remove them and drain on paper towels.

Making the Spicy Marinara Sauce

    In a saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Spices

    Stir in the crushed tomatoes, red pepper flakes, salt, black pepper, and oregano. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat and let the sauce simmer for about 15 minutes, stirring occasionally. Adjust seasoning if necessary.

    Finish with Basil

    Remove the sauce from heat and stir in the chopped fresh basil. Keep warm until ready to serve.
