Assemble the Enchiladas
Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of enchilada sauce on the bottom. Warm the corn tortillas in a dry skillet or microwave until pliable. Take one tortilla, place a portion of the chicken filling in the center, and roll it up. Place seam side down in the baking dish. Repeat with remaining tortillas and filling.

Add Sauce and Cheese
Once all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle shredded cheese evenly over the sauce.

Serve
Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with chopped cilantro and serve with cooked rice and refried beans on the side.
