Method
Making the Sopapilla

Prepare the Dough
In a large bowl, mix together the flour, baking powder, and salt. Add the vegetable oil and warm water, mixing until a dough forms. Knead the dough for about 5 minutes, then cover it with a damp cloth and let it rest for 30 minutes.

Roll and Cut
On a floured surface, roll out the dough to about 1/4 inch thickness. Cut into squares or circles (about 4 inches in diameter).

Fry the Sopapillas
In a deep pan, heat oil for frying. Fry each piece of dough until golden and puffed, about 1-2 minutes on each side. Remove and drain on paper towels.
Assembling the Stuffed Sopapilla

Stuff the Sopapillas
Once the sopapillas are cool enough to handle, carefully slice them open to create a pocket. Fill each with refried beans and shredded cheese.

Top and Serve
Pour the green chile sauce over the stuffed sopapillas and add a dollop of sour cream. Serve hot with cooked rice on the side.
