    Cook the Beef Filling

    In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent. Add the ground beef, cumin, chili powder, salt, and black pepper. Cook until the beef is browned and cooked through. Drain excess fat and set aside.

    Assemble the Enchiladas

    Preheat your oven to 350°F (175°C). Take a tortilla, add 2-3 tablespoons of the beef mixture, roll it up, and place it seam side down in a greased baking dish. Repeat with the remaining tortillas and filling.

    Add Sauce and Cheese

    Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle shredded cheddar cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Serve the enchiladas hot with cooked rice and refried beans on the side.
