Make the Tortillas
In a mixing bowl, combine flour and salt. Gradually add water and olive oil, mixing until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Divide into 8 equal balls and let rest for 30 minutes.

Cook the Tortillas
Roll each ball into a thin circle, about 6 inches in diameter. Heat a skillet over medium-high heat and cook each tortilla for about 1 minute on each side until lightly golden. Set aside.

Assemble the Quesadilla
Place one tortilla on the skillet, sprinkle a generous amount of shredded cheese on half of the tortilla, fold the other half over, and press gently. Cook for 2-3 minutes on each side until the cheese is melted and the tortilla is golden brown.

Serve
Cut the quesadilla into wedges and serve hot with pico de gallo, guacamole, and sour cream.
