    Prepare the Chiles

    Roast the fresh green chiles over an open flame or under a broiler until the skin is charred and blistered. Place them in a sealed plastic bag for about 10 minutes to steam, then peel off the skins, remove the stems and seeds, and chop them coarsely.

    Sauté the Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then, add minced garlic and continue to sauté for another minute until fragrant.

    Combine and Simmer

    Add the roasted green chiles, vegetable broth, cumin, salt, and black pepper to the pot. Stir well to combine. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20 minutes, allowing the flavors to meld.
