Method
Prepare the Flautas

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until hot.

Assemble the Flautas
Take a corn tortilla, place about 2 tablespoons of shredded chicken or beef brisket in the center, sprinkle with a pinch of salt, and roll tightly.

Fry the Flautas
Carefully place the rolled flautas seam-side down in the hot oil. Fry for about 2-3 minutes on each side or until golden brown and crispy.

Drain
Remove the flautas from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve

Plate the Dish
On a serving plate, arrange the crispy flautas and top them with guacamole and sour cream. Serve with a side of cooked rice and refried beans.
