Prepare the Filling
In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Remove from heat and let cool slightly. In a bowl, combine the sautéed onions with 1 cup of shredded cheese, salt, and pepper.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the cheese and onion mixture, and roll it up. Place the rolled enchilada seam-side down in a greased baking dish. Repeat with the remaining tortillas.

Add the Sauce
Pour the enchilada sauce evenly over the rolled enchiladas, ensuring they are well covered. Sprinkle the remaining cheese on top.

Serve
Serve the enchiladas hot with a side of refried beans, cooked rice, and garnish with chopped cilantro.
