    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the shredded brisket and 1 cup of enchilada sauce. Mix well and heat until warmed through.

    Assemble Enchiladas

    Soften corn tortillas by briefly heating them in a pan. Place a portion of the brisket filling in the center of each tortilla, roll it up, and place seam-side down in a greased baking dish.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle the shredded cheese on top.

    Bake

    Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Serve the enchiladas hot with a side of refried beans and rice. Garnish with sour cream and chopped green onions if desired.
