1. Prepare the Birria
In a large pot, add the beef chuck roast, blended chili mixture, bay leaves, and remaining water. Bring to a boil, then reduce heat to low and simmer for about 2-3 hours, until the meat is tender and easily shredded.
2. Shred the Meat
Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to soak up the juices.
3. Prepare the Tacos
Heat a skillet over medium heat. Dip a corn tortilla into the birria broth, then place it in the skillet. Add shredded beef to one half of the tortilla, sprinkle with chopped onions and cilantro, and fold the tortilla in half.
4. Serve
Cook the tacos for about 2-3 minutes on each side until crispy and golden. Serve with lime wedges and additional broth for dipping.
