Prepare the Ingredients
Rinse the clams and mussels under cold running water. Remove any beards from the mussels and discard any open clams or mussels that do not close when tapped.
Add Tomatoes
Chop the tomatoes and add them to the pot. Cook for an additional 3-4 minutes until the tomatoes start to break down.
Add Fish Stock
Pour in the fish stock or water and bring to a boil. Reduce heat and let simmer for 10 minutes.
Cook Seafood
Add the clams, mussels, and mahi mahi fillets to the pot. Cover and cook for about 5 minutes until the clams and mussels open.
Add Shrimp
Add the jumbo shrimp to the pot and cook for an additional 3-5 minutes, until the shrimp are pink and opaque.
Season the Soup
Chop the cilantro and add it to the soup, along with the juice of the limes. Season with salt and black pepper to taste.
Serve
Ladle the soup into bowls and serve hot, garnished with additional cilantro and lime wedges if desired.
