Preparation of Ingredients

Prepare the Cheese

Grate or tear the Oaxaca cheese into small pieces and set aside.

Prepare the Tortillas

Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side until soft and pliable. Keep them wrapped in a clean towel to stay warm.

Prepare Optional Add-Ins

If you are using chorizo, octopus, shrimp, or ribeye, clean and cut them into bite-sized pieces. Season with salt, black pepper, and chili powder.

Cooking

Cook the Add-Ins

In a skillet, heat olive oil over medium heat. Add the prepared chorizo, octopus, shrimp, or ribeye and sauté for about 5-7 minutes until cooked through. Add minced garlic in the last minute of cooking.

Melt the Cheese

Lower the heat and add the grated Oaxaca cheese to the skillet with the cooked protein. Stir gently until the cheese begins to melt and become gooey.

Serve

Transfer the melted queso fundido to a warm serving dish. Serve immediately with the warm flour tortillas on the side for dipping.
