Prepare the Tamarind Glaze
In a small bowl, combine tamarind paste, honey, olive oil, salt, and black pepper. Mix well until smooth.
Glaze the Salmon
Preheat the oven to 375°F (190°C). Place the salmon fillets on a baking sheet lined with parchment paper. Brush the tamarind glaze generously over each fillet.
Bake the Salmon
Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
Prepare the Salad Base
In a large salad bowl, add the mixed salad greens. Top with the orange supremes, grated carrots, dried cranberries, and caramel glazed pecans.
Assemble the Salad
Once the salmon is cooked, remove it from the oven and let it rest for a few minutes. Place a salmon fillet on top of each salad serving and drizzle any remaining tamarind glaze over the top.
Serve
Serve the ensalada de salmon immediately while the salmon is warm!
