Prepare the Marinade

In a bowl, combine olive oil, minced garlic, lime juice, paprika, cumin, salt, and black pepper to create a marinade.

Marinate the Fish

Place the butterflied branzino in a shallow dish and pour the marinade over it. Make sure the fish is well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Vegetables

In a separate bowl, toss the mixed bell peppers, zucchini, and red onion with a little olive oil, salt, and pepper. Set aside.

Preheat the Grill

Preheat your grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.

Grill the Fish

Place the marinated branzino skin side down on the grill. Grill for about 5-7 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

Grill the Vegetables

While the fish is grilling, place the prepared vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serve

Once cooked, remove the branzino and grilled vegetables from the grill. Place the fish on a serving platter and arrange the vegetables around it. Garnish with fresh chopped cilantro and serve with lime wedges.
