Method
Calamari Preparation
Prepare the Calamari
Rinse the calamari under cold water and pat dry with paper towels. Cut the calamari into rings about 1/2 inch thick.
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the egg and milk.
Coat the Calamari
Dip each calamari ring into the egg mixture, then dredge it in the flour mixture until well coated. Set aside on a plate.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).
Fry the Calamari
Fry the calamari rings in batches for 2-3 minutes or until golden brown. Remove them with a slotted spoon and drain on paper towels.
Jalapeno Tartar Sauce Preparation
Chop the Ingredients
Finely chop the jalapeno peppers and dill pickle. Drain the capers if necessary.
Mix the Sauce
In a bowl, combine the mayonnaise, chopped jalapeno peppers, capers, dill pickle, and lemon juice. Mix well.
Season the Sauce
Add salt and black pepper to taste. Adjust seasoning as needed.
