Hummus Preparation

Prepare the Hummus

In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, cumin, salt, and water. Blend until smooth, adding more water if needed to reach desired consistency.

Season the Hummus

Taste the hummus and adjust seasoning with salt and paprika as needed. Transfer to a serving bowl.

Pita Bread Preparation

Make the Dough

In a bowl, mix warm water, yeast, and sugar. Let it sit for 5 minutes until frothy. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until a smooth dough forms.

Let the Dough Rise

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pita

Preheat oven to 475°F (245°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and flatten it into a circle about 1/4 inch thick.

Bake the Pita

Place the circles on a baking sheet and bake for 5-7 minutes, or until they puff up and start to brown. Remove from oven and cover with a towel to keep warm.

Serve the Dish

Arrange the hummus in a serving dish, drizzle with olive oil, and sprinkle with paprika. Serve with fresh pita bread and Kalamata olives on the side.
