Method

Cooking the Meats

  1. 1

    Prepare the Chicken

Boil the chicken breast in salted water until cooked, about 20 minutes. Remove, shred, and set aside.

  2. 2

    Cook the Ground Beef

In a skillet, brown the ground beef over medium heat, seasoning with salt and pepper to taste. Cook for about 10 minutes.

  3. 3

    Fry the Chorizo

In the same skillet, add the chorizo and cook until browned, about 5 minutes.

  4. 4

    Prepare the Pork Belly

In a deep pan, fry the pork belly until crispy and golden brown. Drain on paper towels and set aside.

Preparing the Sides

  1. 5

    Cook the Red Beans

If using dried beans, soak them overnight and then cook until tender. If using canned, simply heat them in a saucepan.

  2. 6

    Prepare the Rice

Cook the white rice according to package instructions.

  3. 7

    Fry the Plantains

Slice the plantains and fry in hot oil until golden brown on both sides.

Assembling the Platter

  1. 8

    Plate the Bandeja Paisa

On a large platter, arrange the rice, beans, shredded chicken, ground beef, chorizo, and pork belly. Add fried plantains and sliced avocado on the side.

  2. 9

    Garnish

Sprinkle with fresh cilantro and serve with lime wedges.
