Preparation of Dough
Mix the Dough
In a mixing bowl, combine masa harina and salt. Gradually add water, mixing until a soft dough forms. If the dough is too dry, add more water a tablespoon at a time.
Shape the Dough
Divide the dough into 8 equal portions and roll each portion into a ball. Flatten each ball into a disc about 1/2 inch thick.

Prepare the Filling
In a bowl, combine the shredded cheese, cooked pork, refried beans, and chopped vegetables (if using). Mix well to combine.
Assembling and Cooking Pupusas
Fill and Shape Pupusas
Take one disc of dough and place a spoonful of filling in the center. Fold the edges of the dough over the filling and pinch to seal. Flatten gently to form a thick tortilla.
Cook the Pupusas
Heat a skillet over medium heat. Cook each pupusa for about 3-4 minutes on each side, or until golden brown and cooked through.
