Prepare the Filling
In a mixing bowl, combine Asian chives, shiitake mushrooms, grated carrot, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Wet the edges of the wrapper with water and fold it over to create a half-moon shape. Pinch the edges to seal tightly. Repeat with remaining wrappers and filling.

Cooking Options
For pan-frying: Heat a non-stick skillet over medium heat, add a little oil, and place the dumplings in the skillet. Cook for about 3-4 minutes or until the bottoms are golden brown. Add a splash of water, cover, and steam for an additional 3-4 minutes. For steaming: Place dumplings in a steamer basket lined with parchment paper. Steam for about 8-10 minutes or until the wrappers are translucent.
