Marinate the Pork Belly
In a bowl, mix soy sauce, brown sugar, minced garlic, lime juice, salt, and pepper. Add the pork belly and marinate for at least 1 hour, preferably overnight.
Grill the Pork Belly
Preheat the grill to medium-high heat. Remove the pork belly from the marinade and grill for about 5-7 minutes on each side or until cooked through. Let it rest for a few minutes before slicing.
Make Spicy Mayo
In a small bowl, mix mayonnaise and sriracha. Adjust the spice level to your preference.
Assemble the Tacos
Warm the corn tortillas on the grill briefly. On each tortilla, layer shredded iceberg lettuce, sliced pork belly, pineapple salsa, chopped avocado, and drizzle with spicy mayo.
