Prepare the Broth

In a large pot, combine the water, lemongrass (bruised and cut into 2-inch pieces), galangal, kaffir lime leaves, and bird's eye chili. Bring to a boil.

Add the Pork Ribs

Once the broth is boiling, add the pork ribs. Reduce heat to a simmer and cook for about 30 minutes, skimming off any foam that rises to the surface.

Add Vegetables

After 30 minutes, add the mushrooms and chopped tomatoes to the pot. Continue to simmer for another 15 minutes until the ribs are tender and the tomatoes have softened.

Season the Soup

Stir in the fish sauce and lime juice. Adjust seasoning to taste. If you prefer it spicier, add more bird's eye chili.

Prepare the Rice

While the soup is finishing, cook the jasmine rice according to package instructions.

Serve

Ladle the soup into bowls, garnish with fresh cilantro and sliced scallions. Serve hot with steamed jasmine rice on the side.
