Prepare the Cheesecake
If using a store-bought cheesecake, slice it into 6 equal pieces. If homemade, ensure it is chilled and firm for easy wrapping.
Wrap the Cheesecake
Place one slice of cheesecake in the center of a corn tortilla. Fold the sides of the tortilla over the cheesecake and then roll it up tightly to enclose the filling. Repeat for all slices.
Prepare the Batter
In a mixing bowl, whisk together the flour, eggs, milk, sugar, and vanilla extract until smooth to create a batter.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Cheesecake Wraps
Dip each wrapped cheesecake into the batter, allowing excess batter to drip off. Carefully place the wraps into the hot oil and fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
Serve
