Prepare the Broth

In a large pot, bring the water or chicken broth to a boil. Add the chopped lemongrass, galangal slices, and torn kaffir lime leaves. Reduce the heat and let it simmer for about 10 minutes to infuse the flavors.

Add Mushrooms and Chilies

After simmering, add the sliced mushrooms and smashed bird's eye chilies to the pot. Continue to simmer for another 5 minutes.

Cook the Shrimp

Add the peeled and deveined shrimp to the pot. Cook until the shrimp turns pink and opaque, about 3-4 minutes.

Season the Soup

Stir in the fish sauce and lime juice. Taste and adjust the seasoning as needed.

Garnish and Serve

Ladle the soup into bowls and garnish with chopped cilantro. Serve hot with additional lime wedges on the side.
