Cooking Instructions
- 1
Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Rinse under cold water and pat dry.
- 2
Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the ice water, whisking until a smooth batter forms.
- 3
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 180°C (350°F).
- 4
Fry the Brussels Sprouts
Dip each Brussels sprout half into the batter, ensuring it is well coated. Carefully drop into the hot oil and fry in batches until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
- 5
Prepare the Secret Sauce
In a small bowl, combine mayonnaise, Sriracha sauce, lemon juice, and garlic powder. Mix well to combine.
- 6
Serve
Plate the fried Brussels sprouts, drizzle with the secret sauce, and top with toasted almonds before serving.
