Preparation and Cooking

Marinate the Chicken

In a large bowl, combine olive oil, soy sauce, curry powder, minced garlic, minced ginger, and lime juice. Mix well. Cut chicken breast into bite-sized pieces and add to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours.

Prepare the Skewers

Soak wooden skewers in water for at least 15 minutes to prevent burning. Preheat grill or grill pan over medium-high heat.

Skewer the Chicken

Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.

Grill the Skewers

Place the skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has grill marks.

Serve

Serve the chicken satay hot with peanut sauce and cucumber pickles.
