Preparation

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and set aside.

    Prepare the Vegetables

    Chop the bell pepper into thin strips and slice the green onions finely, separating the white parts from the green tops.

    Prepare the Sauce

    Mince the garlic and ginger. In a bowl, mix the soy sauce, chili oil, rice vinegar, minced garlic, minced ginger, and sugar.

Cooking

    Toast the Spices

    In a dry skillet over medium heat, toast the Szechuan peppercorns and dried red chilies until fragrant, about 2 minutes. Remove from heat and set aside.

    Cook the Chicken

    In the same skillet, add a little oil and heat over medium-high. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Add the bell pepper strips and the white parts of the green onions to the skillet with the chicken. Sauté for another 3-4 minutes until the vegetables are tender.

    Combine with Sauce

    Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything in the sauce, and cook for an additional 2 minutes.

    Add the toasted Szechuan peppercorns and dried chilies to the dish, mixing well to incorporate.
