Prepare the Marinade

In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, and red pepper flakes. Mix well until the sugar is dissolved.

Marinate the Chicken

Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Preheat the Grill or Pan

Preheat your grill or a large skillet over medium-high heat. If using a skillet, you may want to add a small amount of oil to prevent sticking.

Cook the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Grill or pan-fry the chicken for 6-7 minutes on each side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 75°C (165°F).

Garnish and Serve

Once cooked, remove the chicken from the heat and let it rest for a few minutes. Slice the chicken and sprinkle with toasted sesame seeds and additional chopped green onions if desired. Serve with rice or lettuce wraps.
