Preparation

1. Chop the Vegetables

Finely chop the onion, carrot, and celery. Mince the garlic cloves.

2. Heat the Oil

In a large pot, heat the olive oil over medium heat until shimmering.

Cooking

3. Sauté the Vegetables

Add the chopped onion, carrot, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.

4. Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

5. Add Liquids and Seasoning

Pour in the vegetable broth and water. Add bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil.

6. Simmer the Soup Base

Once boiling, reduce the heat to low and let the soup base simmer for 30 minutes to allow the flavors to meld. Stir occasionally.

7. Strain (Optional)

If desired, strain the soup base to remove the solids, and return the liquid to the pot.
