Marinating the Pork Cheeks

    Prepare the Marinade

    In a bowl, whisk together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and red wine vinegar until well combined.

    Marinate the Pork Cheeks

    Place the pork cheeks in a resealable plastic bag or a shallow dish. Pour the marinade over the pork cheeks, ensuring they are well coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork Cheeks

    Preheat the Oven

    Preheat your oven to 160°C (320°F).

    Sauté the Vegetables

    In a large oven-safe pot or Dutch oven, heat a bit of olive oil over medium heat. Add the sliced onion, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add the Pork Cheeks

    Remove the pork cheeks from the marinade (discard the marinade) and add them to the pot with the sautéed vegetables. Brown the pork cheeks on all sides for about 8-10 minutes.

    Add Broth and Herbs

    Pour in the chicken or vegetable broth and add the bay leaves. Bring the mixture to a simmer.

    Bake in the Oven

    Cover the pot with a lid and transfer it to the preheated oven. Cook for 2.5 to 3 hours or until the pork cheeks are tender and easily pull apart with a fork.

    Finish with Honey

    Once done, remove the pot from the oven. Stir in honey and let it sit for about 10 minutes before serving.
