Method

Dough Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

In a large bowl, combine the ground pork, chopped shrimp, green onions, soy sauce, sesame oil, ginger, and garlic. Mix well until all ingredients are evenly incorporated. Set aside.

Assembling and Cooking

  1. 3

    Assemble the Shumai

After the dough has rested, divide it into small balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches in diameter). Place about 1 tablespoon of filling in the center of each circle. Gather the edges of the dough up around the filling and pinch to seal, leaving the top exposed.

  2. 4

    Steam the Shumai

Prepare a steamer (bamboo or metal) lined with parchment paper. Place the shumai in the steamer, making sure they don’t touch. Steam over boiling water for about 15-20 minutes until the filling is cooked through.

Dipping Sauce Preparation

  1. 5

    Make the Dipping Sauce

In a small bowl, mix together soy sauce, rice vinegar, and chili oil until well combined. Serve alongside the steamed shumai.
