Begin by preheating your oven to 300°F (150°C). Pat the pork belly dry with paper towels. Trim any excess fat if necessary, but leave a good layer to ensure moisture during cooking.

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this spice mixture all over the pork belly, ensuring an even coating.

In a separate bowl, combine the soy sauce and apple cider vinegar. Whisk them together until well mixed.

Place the seasoned pork belly on a rack in a roasting pan. Pour the soy sauce mixture over the pork belly, allowing it to soak into the meat. Cover the roasting pan with aluminum foil and place it in the preheated oven.
