    Soak the Noodles

    In a large bowl, soak the mei fun noodles in hot water for about 15 minutes or until they are softened. Drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, oyster sauce, sesame oil, minced garlic, grated ginger, and black pepper. Set aside.

Cooking

    Cook the Eggs

    In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs in a bowl and pour them into the pan, scrambling until fully cooked. Remove from the pan and set aside.

    Stir-fry the Shrimp

    In the same pan, add another tablespoon of vegetable oil and increase the heat to high. Add the shrimp and stir-fry for about 2-3 minutes until they turn pink and are cooked through. Remove and set aside.

    Sauté the Vegetables

    Add the remaining tablespoon of vegetable oil to the pan. Stir in the bell pepper, carrots, and green onions, cooking for about 4-5 minutes until they start to soften. Add the bean sprouts and cook for another 1-2 minutes.

    Return the cooked shrimp and scrambled eggs to the pan. Add the soaked mei fun noodles and pour the sauce over everything. Toss to combine, cooking for an additional 2-3 minutes until everything is heated through.

Serving

    Serve the mei fun hot, garnished with additional green onions if desired.
