In a large mixing bowl, combine the soy sauce, red wine vinegar, brown sugar, olive oil, minced garlic, black pepper, dried thyme, dried rosemary, smoked paprika, and salt. Whisk together until the sugar is fully dissolved and all ingredients are well incorporated.
Marinating the Brisket

Place the beef brisket in a large, resealable plastic bag or a deep dish. Pour the marinade over the beef, ensuring that it is fully covered.

Seal the bag or cover the dish tightly with plastic wrap. Refrigerate for at least 8 hours, preferably overnight, allowing the flavors to penetrate the meat.
