Marinating the Pork Belly

Prepare the Marinade
In a bowl, combine the soy sauce, minced garlic, brown sugar, sesame oil, black pepper, and grated ginger. Mix well until the sugar is dissolved.

Marinate the Pork
Place the pork belly in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork belly, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for better flavor absorption.

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare for Roasting
Remove the pork belly from the marinade and place it on a roasting pan. Reserve the marinade for later use.

Roast the Pork Belly
Roast the pork belly in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

Glaze with Marinade
Every 30 minutes, baste the pork belly with the reserved marinade to enhance flavor and keep it moist.

Finish under the Broiler
For a crispy skin, increase the oven temperature to broil for the last 10-15 minutes. Keep a close eye to avoid burning.

Once done, allow the pork belly to rest for about 10 minutes before slicing. Garnish with chopped scallions before serving.
