Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water while mixing until the dough comes together.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a bowl, mix together the ground pork, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper until well combined.

    Chill the Filling

    Cover the filling mixture and refrigerate for at least 20 minutes to allow the flavors to meld.

Assembly and Cooking

    Roll the Dough

    After resting, divide the dough into small pieces (about 1 inch). Roll each piece into a thin circle on a floured surface.

    Fill the Gyoza

    Place a small spoonful of the filling in the center of each circle. Moisten the edges with water, fold in half, and pinch to seal.

    Cook the Gyoza

    In a skillet, heat a little oil over medium-high heat. Place the gyoza in the skillet and cook until the bottom is golden brown, about 3-4 minutes.

    Add a few tablespoons of water to the skillet and cover immediately. Steam for about 5-7 minutes until cooked through.

    In a small bowl, combine soy sauce, rice vinegar, sesame oil, and chili oil. Mix well and add chopped green onions if desired.
