    Prepare the Filling

    In a mixing bowl, combine the fresh fish roe, softened cream cheese, finely chopped chives, lemon juice, salt, and black pepper. Mix gently until well combined, ensuring not to break the roe too much.

    Soak Rice Paper Wrappers

    Fill a shallow dish with warm water. Dip one rice paper wrapper at a time into the water for about 10-15 seconds, or until it becomes pliable. Carefully remove it from the water and place it on a clean, damp cloth.

Assembly

    Fill the Rice Paper

    Place about 2 tablespoons of the roe mixture in the center of the soaked rice paper wrapper. Fold the sides over the filling and then roll from the bottom to the top, sealing the filling inside. Make sure to roll tightly but gently to avoid tearing the wrapper.

    Repeat the Process

    Continue the process with the remaining rice paper wrappers and roe mixture until all are filled and rolled.

Cooking

    Fry the Fish Roe Bags

    Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the fish roe bags seam side down in the skillet. Cook for 2-3 minutes on each side, or until golden brown and crisp.

Serving

    Once cooked, remove the fish roe bags from the skillet and place them on a paper towel to drain excess oil. Garnish with fresh dill before serving. Serve warm with a dipping sauce of your choice, if desired.
