Preparation

1. Prepare the Vegetables

Peel the carrots and cut them into chunks. Clean the celery stalks and chop them into pieces. Peel and quarter the onion. Crush the garlic cloves slightly but leave them whole.

2. Prepare the Chicken

Rinse the whole chicken under cold water and remove any giblets or excess fat from the cavity. Pat the chicken dry with paper towels.

3. Combine Ingredients

In a large stockpot, add the whole chicken, prepared carrots, celery, onion, and crushed garlic. Pour in 12 cups of water.

4. Add Herbs and Spices

Add bay leaves, thyme, black peppercorns, and salt to the pot.

5. Bring to a Boil

Place the pot over medium-high heat and bring the mixture to a boil.

6. Simmer the Broth

Once boiling, reduce the heat to low and let it simmer gently for about 1.5 to 2 hours. Skim off any foam or impurities that rise to the surface.

7. Strain the Broth

After simmering, carefully remove the chicken from the pot and set it aside to cool. Strain the broth through a fine-mesh sieve or cheesecloth into another pot or large bowl to remove the vegetables and spices.

8. Adjust the Seasoning

Taste the broth and add additional salt if needed. Allow the broth to cool completely before storing.
