    Clean the Tripe

    Rinse the cattle tripe under cold running water to remove any impurities. Make sure to turn it inside out and scrub it well.

    Boil the Tripe

    In a large pot, add 8 cups of water, 1 tablespoon of salt, and 1 cup of white vinegar. Bring to a boil. Once boiling, add the cleaned tripe and reduce the heat to a simmer. Cover and cook for about 2 hours or until the tripe is tender.

    Drain and Rinse

    After cooking, drain the tripe and rinse it under cold water to stop the cooking process. Cut the tripe into bite-sized pieces and set aside.

    Sauté Aromatics

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5-7 minutes.

    Add Spices

    Add the bay leaves, whole Thai chili peppers, cumin seeds, and black peppercorns to the skillet. Stir well and cook for an additional 2 minutes until the spices are fragrant.

    Combine with Broth

    Pour in the 4 cups of chicken broth and bring to a simmer. Add the previously cooked tripe pieces to the skillet.

    Simmer the Dish

    Allow the mixture to simmer for about 20-30 minutes, stirring occasionally, until the flavors meld together.

    Garnish and Serve

    Remove from heat and stir in the chopped fresh parsley. Serve hot with lemon wedges on the side for added flavor.
