Marinade Preparation

Slice the Beef
Thinly slice the beef sirloin against the grain into strips about 1/8 inch thick.

Prepare the Marinade
In a large bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, black pepper, and red pepper flakes. Mix well until the sugar is dissolved.

Marinate the Beef
Add the sliced beef to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably overnight for better flavor.
Cooking

Heat the Pan
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Cook the Beef
Remove the beef from the marinade (reserve the marinade) and add it to the hot skillet. Cook for 5-7 minutes, stirring frequently, until the beef is browned and cooked through.

Add Marinade
Pour the reserved marinade into the skillet with the beef. Bring it to a simmer and cook for an additional 2-3 minutes until slightly thickened.

Garnish and Serve
Sprinkle the cooked beef bulgogi with sesame seeds and additional chopped green onions if desired. Serve hot over steamed rice or in lettuce wraps.
