    Preheat your oven to 400°F (200°C). Place the corn tortillas on a baking sheet and bake for about 5-7 minutes until they are crispy and golden brown.

    Spread a layer of refried beans on each crispy tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese.

    Finish the tostadas with a dollop of sour cream, sliced jalapeños, and a sprinkle of chopped cilantro.

Enchilada Directions

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper. Sauté for about 5 minutes until softened.

    Stir in the shredded chicken and 1 cup of enchilada sauce into the skillet. Cook for an additional 3-4 minutes until heated through.
