Steak Preparation

    Season the Steak

    Rub the ribeye steaks with olive oil, then season both sides with salt, black pepper, and garlic powder. Let the steaks sit at room temperature for about 30 minutes.

    Preheat a grill or skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

Ranchero Sauce Preparation

    Prepare the Vegetables

    Chop the tomatoes, onion, garlic cloves, and jalapeño pepper into small pieces. Finely chop the cilantro.

    Cook the Sauce

    In a medium saucepan over medium heat, add a drizzle of olive oil. Sauté the onion and garlic until translucent. Add the tomatoes and jalapeño, cooking until the tomatoes break down. Stir in cilantro, lime juice, and salt. Simmer for about 10 minutes.

    Assemble the Dish

    Slice the rested steaks against the grain. Warm the corn tortillas in a skillet or microwave. Place steak slices on tortillas, top with ranchero sauce, avocado slices, and a dollop of sour cream.
