Marinate the Chicken
In a bowl, combine the chicken thighs, Jamaican jerk seasoning, olive oil, minced garlic, and lime juice. Mix well to coat the chicken evenly. Cover and let marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Prepare the Vegetables
Chop the green onions and red bell pepper into bite-sized pieces. Set aside.

In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.
