Method

Prepare Ranchero Sauce

  1. 1

    Heat the oil

In a medium skillet, heat the olive oil over medium heat.

  2. 2

    Sauté onion and garlic

Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

  3. 3

    Add tomatoes and jalapeño

Stir in the diced tomatoes and minced jalapeño. Cook for about 5-7 minutes until the tomatoes break down.

  4. 4

    Season the sauce

Add cumin, salt, and black pepper, mixing well. Allow the sauce to simmer for another 5 minutes. Stir in chopped cilantro before removing from heat.

Cook the Eggs and Tortillas

  1. 5

    Fry the tortillas

In another skillet, lightly fry the corn tortillas over medium heat until they are warm and slightly crispy, about 1-2 minutes on each side. Keep warm.

  2. 6

    Cook the eggs

In the same skillet, crack the eggs and cook to your preferred doneness (sunny side up or over easy) for about 4-5 minutes.

Assemble Huevos Rancheros

  1. 7

    Layer the tortillas

Place two tortillas on each plate.

  2. 8

    Add ranchero sauce

Spoon a generous amount of the ranchero sauce over the tortillas.

  3. 9

    Top with eggs

Place two eggs on top of the sauce on each plate.

  4. 10

    Add toppings

Finish by adding sliced avocado, crumbled feta cheese, and a dollop of sour cream on top.
