Prepare the Tortillas
Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- 5
Assemble the Chimichangas
Place a generous amount of the beef and bean mixture in the center of each tortilla. Fold in the sides and roll up tightly to enclose the filling.
- 6
Heat the Oil
In a large pot or deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chimichangas
Carefully place the rolled chimichangas in the hot oil, frying them in batches if necessary. Fry until golden brown and crispy on all sides (about 4-5 minutes).

Remove the chimichangas from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with sour cream, guacamole, and salsa.
