Prepare the Peppers
Preheat your oven to 400°F (200°C). Roast the poblano peppers in the oven for about 20 minutes, turning occasionally, until the skin is charred and blistered. Remove them from the oven and place them in a bowl, covering with plastic wrap to steam for 10 minutes.

Stuff the Peppers
Once the peppers are cool enough to handle, peel off the charred skin, making sure not to tear the peppers. Carefully slice open one side of each pepper and remove the seeds. Stuff each pepper with shredded Monterey Jack cheese.

Fry the Chile Rellenos
Heat the olive oil in a deep frying pan over medium heat. Dip each stuffed pepper into the batter, allowing excess to drip off before carefully placing them in the hot oil. Fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
